Makai no Handvo or Corn Handvo is a traditional Gujarati snack dish made in almost all homes of Gujarat during monsoon when corn is available in plenty. This handvo is easily made in a non stick pan.It is a kind of savory cake made of rice and lentil flour.

Ingredients
- 1 cup Handvo Flour
- 1 cup Curd
- 1 cup Corn Kernels to be ground into paste
- 1/4 cup Corn Kernels to be added whole
- 5 Green Chillies
- 1 Ginger Piece of i inch size
- 1/2 cup Coriander
- 8 tbsp Cooking Oil
- 1/3 Cup Sesame Seeds
- 1 tbsp Mustard Seeds
- 1 tsp Turmeric Powder
- 1 tsp Red Chilli Powder
- 1 tsp Dhana Jeera Powder
- 1 tsp Sugar
- Salt to taste
Cooking Directions
- Pre Preparation: Soak 250 gm Handvo flour in 250 gm curd for 8 hours.
- Grind 1 cup corn along with coriander,green,chillies and ginger to a green paste in a mixer and add to batter.Now add remaining 1/4 cup whole corn kernels to the batter.Add all the spices like turmeric, red chilli powder,dana jeera powder, salt and sugar. Mix well.
- Heat 4 tbsp oil in a non stick pan. Add mustard seed and half of sesame seeds and allow to crackle. Add this tampering to the batter.
- Now heat another 2 tbsp oil in the pan and pour the batter in the pan.
- Sprinkle remaining half of sesame seed on top of this batter.
- Cover and allow to cook on slow flame for 5-10 minutes till the base becomes crispy and brown.
- Now take a plate and invert the half cooked handvo from the non stick pan to the plate.
- Heat another 2 tbsp oil in pan.Now carefully transfer the handvo with the uncooked side down back to the pan.
- Again cover and cook for 5-10 minutes on slow flame.
- Poke a knife in the center of the handvo. If the knife comes clean it is done.
- Serve piping hot on a rainy evening with chai.
