Instant South Indian Uttapam Recipe

Uttapam is a quick and easy to make traditional South Indian savory pancake eaten as snack or breakfast. Uttapam looks like a thick dosa with vegetables.

Prep Time: 5 min
Cook Time: 30 min
Serves: 6

Ingredients:

  • 500 gram Ready made Idli or Dosa Batter
  • 2 Onion
  • 2 Tomato
  • 3 green chillies
  • 1/2 cup Coriander leaves
  • Cooking oil  for shallow frying
  • Salt as per taste
Method:
  1. Heat the Roti Maker.
  2. Finely chop onion,tomato,chilli and coriander.
  3. Add 1 tsp oil and salt to Idli batter and mix well. Add the chopped vegetables to the batter and mix.
  4. Take one ladle of batter and pour in the middle of the Roti Maker.Spread the pancake batter and add 1/2 tsp oil along the edges. Keep the pancake thicker than dosa.Allow to cook for a minute.
  5. When one side is golden brown, gently flip on other side with a spatula. Again add 1/2 tsp oil along the edges. Cover the lid of Roti Maker and cook for another minute.
  6. Remove onto a plate with brown side up and serve hot with coconut chutney.

Rice Flour Khichu Recipe



Rice Flour Khichu is a steamed traditional Gujarati snack and is available as a street food in Gujarat. Here is a quick and easy recipe to make this healthy breakfast dish.

Prep time: 5 minutes
Cook time: 15 minutes
Total time: 20 minutes
Yield: 1 Serving

Ingredients

  • 1/4 cup Rice Flour
  • 2 tsp Oil
  • 1 tsp Jeera (Cumin Seeds)
  • 2 Green Chillies finely chopped
  • 1 tbsp Fresh Coriander finely chopped
  • 1 cup Water for steaming
  • 1/3 cup Water for making batter
  • Salt to taste

Cooking Directions

  1. Fill the pressure cooker with 1 cup water(250 ml). Cover it with lid without the whistle and let the water boil.Put the steamer instead of the whistle on the pressure cooker.
  2. Make a batter of rice flour,jeera,coriander,green chillies,oil and salt by adding water.
  3. Now pour the batter in the steamer, cover with lid and steam for 5 minutes.
  4. When it is done check by putting knife in the batter. If it is done knife will come out clean.
  5. Serve piping hot after pouring 1 teaspoon raw peanut oil on it.






Italian Caprese Salad Recipe



We all love Italian cuisine!!! Here is a tasty and healthy Italian salad recipe that is quick and easy to make.

Ingredients

  • 1 tsp Extra Virgin Olive Oil
  • 1 Large Tomato
  • 25 g Cheese
  • 8 Pitted Whole Green Olives
  • 1 tsp Italian Seasoning(This is a readymade mix available in market which is a mixture of herbs-oregano,basil,parsley,thyme,rosemary with onion powder,garlic powder,papprika powder and lemon oil)
  • 1 tsp Coarsely Crushed Pepper
  • Salt to taste

Cooking Directions
  • Dice the tomatoes and cheese to cubes. Toss in the olives.
  • Add Italian seasoning,slat,pepper and olive oil.
  • Toss and mix everything in a bowl.
  • Serve chilled.

Kadhai Paneer Subzi Recipe



Kadhai Paneer is a traditional Punjabi recipe that is tasty,healthy and ridiculously quick and easy to make. It can also be used as a stuffing for frankie or kathi rolls. It gets its unique aroma and flavour from the secret ingredient "kasoori methi" and "garam masala".

Ingredients

  •     100 grams Paneer (Cottage Cheese)
  •     1 Large Capsicum
  •     2 Large Tomatoes
  •     1/2 cup Corn
  •     1/4 cup Kasoori Methi( Dried Fenugreek Leaves)
  •     1 tsp Garam Masala
  •     1 tsp Red Chilli Powder
  •     1 tsp Turmeric Powder
  •     1 tsp Dhana Jeera Powder
  •     1 tsp Jeera
  •     2 Cloves
  •     1 tbsp Oil
  •     salt to taste

Cooking Directions
  1. Dice the paneer,capsicum and tomatoes into cubes.
  2. Heat oil in a kadhai and put jeera and cloves to splutter.
  3. Now add all the diced vegetables and corn.
  4. Stir fry for 1 minute.
  5. Add all the spices along with Kasoori Methi and Garam Masala. Again Stir fry for another 10 minutes.
  6. Serve immediately with hot phulkas. 




Sabudana Khichdi Recipe



Sabudana Khichdi is a mildly spicy dish made from tapioca and potato. This is a Farali Recipe made in fasting known as vrat in India . However you can also have it as a snack or breakfast as it is quick and easy to make.This Sabudana Khichdi is made with green paste to give a fresh taste.

Total time: 2 Hours 10 Minutes
Yield: 2 Servings





Ingredients

  • 1/2 cup Soaked Sabudana
  • 1 Large boiled and diced potato
  • 1/4 cup Peanuts
  • 10 Curry Leaves
  • 4 Green Chillies
  • 1 Ginger piece of 1 inch size
  • 1/2 cup Coriander
  • 1 tsp Cooking Oil
  • 1 tsp Jeera (Cumin Seeds)
  • 1 tbsp Lemon Juice
  • Salt to taste
  • Sugar to taste

Cooking Directions
  1. Pre Preparation:Throughly wash 1/2 cup sabudana under running water two to three times. This removes excess starch from sabudana.Drain water completely.Sprinkle some water on sabudana and keep covered for 2 hours.After 2 hours sago will become spongy and is ready to use.
  2. Make a green paste by grinding green chillies,ginger and coriander in a mixer.
  3. Heat oil in a non stick pan. Add jeera and allow to crackle. Now add curry leaves.
  4. Now add whole peanuts and roast till it is slightly brown.Peanuts give a nice crunchy taste to this dish.
  5. Now add potato dices and allow to cook.
  6. Add sago and green paste and stir fry for 4 minutes.
  7. Finally add salt,sugar and lemon juice as per balanced taste.
  8. Sabudana Khichdi is ready to be served hot with chilled sweetened curd.

Gujarati Saragva nu Shaak Recipe


Saragva Sing nu Shaak is a traditional Gujarati Recipe that is made with drumsticks in a curd gravy. It tastes best when served with Bhakhri.

Total time: 20 minutes
Yield: 2 Servings

Ingredients:
  • 4 Drumsticks
  • 2 tbsp Besan/ Gram Flour
  • 3/4 cup Curd
  • 1 tsp Turmeric Powder
  • 1 tsp Dana Jeera Powder
  • 1/2 tsp Red Chilli Powder
  • 1 tsp Oil
  • 1 tsp Mustard Seeds
  • 10 Curry Leaves
  • 1 Small Piece of Ginger finely chopped
  • 1 Green Chilli
  • salt to taste
  • corriander leaves for garnishing
Cooking Directions:
  1. Wash and cut the drumsticks in to 3 inch pieces using a kitchen scissor.
  2. Boil 1/2 cup water in a pressure cooker and cook these drumsticks for 1 whistle. Do not throw away the water that was used to boil the drumsticks because it is full of vital nutrients and acts as a stock for the recipe
  3. Prepare a batter of curd and besan of medium consistensy. Add spices like turmeric,dhana jeera,red chilli powder and salt and mix well using a beater so that there are no lumps.
  4. In a kadhai heat oil and make a tampering of mustard seeds. Now add curry leaves,chopped ginger and green chilli.
  5. Now add the curd and flour batter.
  6. Next add the boiled drumsticks along with the water that was used to boil it.
  7. Cover and let simmer for 5 minutes.
  8. When done garnish with corriander.
  9. Serve when hot with chapati or bhakhri.
